Cauliflower Salad Recipe

Quick, delicious dish! Great by itself or with seafood or grilled meat.

Dietaries: Vegan, raw, low calories, gluten free, dairy free.


Ingredients: (serves 4)


½ head Cauliflower finely chopped (use food processor)

¼ cup Toasted flaked Almonds

1 tbsp Currants

½ bunch Chopped Fresh Dill

1 Lemon (juice and zest)

2 tbsp Extra Virgin Olive Oil

Salt & Pepper to taste


Steps:

Combine all ingredients.

Serve very chilled.

Can be made in a day in advance, keep refrigerated.


Serving Suggestion: Add avocado & cherry tomato before serving
